I take a slightly different approach. I cut the head and feet off first then slit the skin and pull it off. At the club we have a cleaning station where there is water and a table for fish and small game. Usually there is a pair of gardening shears to cut the feet and heads with and a bucket for saving the liver, heart and lungs for fish bait.

I have seen a few people that cut a slit low on the back then stood on the tail while the pulled the skin up. That usually left a small triangular piece of skin on the belly and a small piece on the back. I guess squirrels are like cats; more than one way to skin one.

I make the slit in the middle of the back, put my fingers in, and pull apart. This allows you to work the fur up until its over their head and feet at one end and their tail and feet at the other. Cut off the feet, tail, and head, and then gut.

I used to do the "stand on the tail" trick, but found I get less loose fur on the meat this way.
