What seems to throw so many off is that G_d created ALL in 7 days. Did any ever stop, think, and ask, what is G_d's times? In 2Pe 3:8 it states:
But, beloved, be not ignorant of this one thing, that one day is with the Lord as a thousand years, and a thousand years as one day. HIS timing is different than ours and to try to understand G_d is impossible for us.
I know that sounds like a cop-out, we can't understand G_d, to explain away the unexplainable but seriously, how can mere man ever hope to explain everything in the Bible or G_d, after all, HE created ALL

That is what I believe to so. If you study the Edgar Cayce phenomenon A lot of things become much clearer. Not perfectly clear but one gets a much better understanding how humanity came about.
To strongly agree one way or another is stupid. Think for yourselves, ask questions, and then you will realize there are a lot of things that unexplainable such as pyramids, earthen works only seen from the sky, underwater architectures, etc.

Can one walk, and sit at rest the same time? Can one tell the truth, and yet a lie simultaneously? Can one sleep and remain awake? Can one die, and yet live? Can one win, but lose, or lose but win?
Can one believe and not believe? Can one create, and evolve simultaneously?
Evolution might be a tool used in creation, but that's as far as I'll go.
In the creation account in Genesis, God "Spoke" and created the heaven and the earth, separated the seas from the lands, brought forth the animals, spoke light and dark, and the signs of the seasons...It is that God spoke these things.
But with man, God, "...formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a living soul." Genesis 2:7.
God spoke and said, "Let us make man" (Gen 1:26). But in the doing of it, God put His own hand to work. He didn't 'speak' man of the dust of the ground, He FORMED man of the dust of the ground.
In no other instance can we find God actually, by craft and artisanship, by design and purpose, FORMING a living being.
As to evolution, those things He spoke into existence may well have evolved. I've no quarrel with that. But man? No sir...God FORMED man, and BREATHED into his nostrils the breath of life, and in that God's breath is the spirit of life, the inevitable result was man...who does not evolve.
In fact, looking at the world around us, it's pretty doggoned evident that unregenerated man has 'DEvolved', and continues to do so.
So much more the need then, that man come to know God, as a species dedicated toward life in God and God's eternal purpose.
Evolution is FACT. I know its much easier to just attribute everything to the will of god, but you are sorely mistaken. You know what will happen to non believers at the "rapture"? Nothing, just like the dilusionsed believers.

A simple question--where is there any evidence of man evolving from one celled critters? Where is there any forms of half birds /etc. evolving today? Surely there must be some examples in that process somewhere.

Honestly am not. Those are the words spoken by Jesus to those who scoffed at his ministry. The religious leaders berated Him and tried to corner Him but to no avail. He simply told them that they could not understand spiritual things because they were not "God's children but swayed by the "dark side"--lol.
