Sorry I haven't posted in a while, but I still lurk.

Like I said, what are you making. Smoking or grilling.
Here are some of mine.
Chicken, apple wood smoke.


All sauced up.


Pork steaks.....


A Wisconsin steak sandwich, it just does not get better then this.


More ribs, wish you could have been here for these.


Ribs, brats and beans.

good looking Q there Benton. what is 'wisconsin steak'?
I have a gas grill I've modded to use the ceramic 'briquittes' so I lay wood atop them and light off. I have the meat/food on the other side, top. once the wood burns down I usually move the meat over the coals to grill or leave it and add more wood to roast/smoke it.
that chicken looks top-notch that's my favorite anymore. I've been marinateing bird for few hours then 'smoke roasting' - no need for sauce - I have to watch carbs and sodium as well as sweets

A "Wisky" steak sandwich can be made from several types of beef:
"Restaurant" steak
"Spencer" steak
"Sirloin" steak
and the famous "Thin Cut Rib-eye"

All are just different types of burgers (except the rib-eye).

The sirloin is from a single cut of meat where as the others are a mix of cuts and then formed into a patty. Fat content varies from one to another too.

ok - usually a high-end burger meat. sounds good.
I use apple or persimmon wood sometimes, and chestnut too.
