Today at work I was researching FAL's and I discovered that it has a way to disable the gas system and make the rifle sort of a "single shot" similar to a bolt action where you must manually cycle the weapon. Does anyone have any experience with this?

This was designed into the system to allow for grenade launching with the appropiate blank.
As we never seemed to get issued with BFA's we used this gas shut off mode so we didn't have to clean the piston etc while firing blanks during exercises.

Why would one want to do this? I mean if you want to cycle manually, use subsonic ammo.

Well from what I have read the past 2 days alot of people can drop the MOA about an inch with the gas system disabled. Some guys were getting 1 MOA with some Winchester Gold ammo and the gas system disabled.
Also subsontic ammo is just another ammo I would have to buy and "keep in stock" Also you would have to mark you subsonic magazine so you would know which one it is when the time comes.
I also read of a guy that has approx 13,500 rounds through his fal without a single cleaning. All he does is oil the rails. The feedramp is completely made of carbon on the rifle and it has pictures of him throwing it in a mudhole and then firing away with it without cleaning or drying it. He says he likes to walk up to guys with AR type weapons and open the bolt and ask them if their guns can fire like this.
